Snowball doughnut holes


With the weekend upon us, I thought I'd post a recipe that my kids love me to make on a lazy morning. They are not healthy by any means, but they are ridiculously easy to make and don't take too much time. If you have some sort of deep fryer, these will probably be easier to make. I don't fry too often so I don't have one. Instead, I use an electric skillet.

I adapted this recipe from "Cooking Down East" by Marjorie Standish. If you read this blog for any length of time, you'll find I use recipe from this cookbook fairly often. My grandparents used to travel to Maine pretty regularly and my grandmother became a big fan of Marjorie Standish's cookbooks. I've tried a lot of the recipes in this particular book, and have found very few we didn't enjoy. I usually serve these yummies with scrambled eggs. PLEASE serve these with some type of protein!

Projected prep time: 5 minutes; Projected cook time: 2 minutes per fry; Cool time: 20 minutes
2 cups Pamela's Baking & Pancake Mix (not the bread mix)
1 cup applesauce (I use unsweetened)
1 large egg
1/4 tsp. nutmeg
Powdered sugar

Preheat a good amount of oil in your skillet or fryer to 375 degrees (I usually heat to between 350 and 375, probably closer to 360 or 365).

Mix flour and nutmeg together, then add applesauce and egg, mix well. Drop by smaller teaspoonfuls into oil and fry until evenly brown on both sides (if you're not using a fryer you'll need to turn them yourself).


Drain and cool on several layers of paper towels.


Place about 1/2 cup of powdered sugar in a clean brown paper bag (think lunch bag size). After doughnuts have cooled about 20 minutes, place some in the bag and shake to coat, then repeat until all have been coated with powdered sugar.

Yum!
